Gil & George – our omakase Supper Club
There are some evenings that deserve more than a reservation. They deserve a table where stories linger, where food is not only eaten but experienced, and where wine does more than fill a glass—it opens a conversation. Over the years, we have hosted countless nights where friends, colleagues, and fellow wanderers in life gathered around our tables and said: you should share this with more people.
The inspiration
Two kitchens, continents apart- one in the warm, sultry Bengal, in an air ripe with tropical flavors, while the other in Bayonne reminiscence of salubrious weather, green fields and French quintessential dining. George & Gil is an idea inspired by our mother’s kitchens, food made with simplicity, authenticity, the freshest, healthiest and highest quality ingredients, but most importantly with love.
The experience
A table where conversation stretches—across cinema, politics, memory, desire—and where the food is the first, but not the last, act of connection. I come to this table not only as a cook, but as someone who has spent years in the corporate world, learning the art of bringing the right people together, of reading silences as well as words, and of knowing that the best exchanges happen when the guard is lowered, and the glass is raised.
Courses : an intimate evening of three or four courses finished with artisanal cheeses, each plate composed with the care of someone who balances authentic techniques with original recipes- unpredictable, bold, and yet familiar in its warmth.
Wine pairing : Each course comes with a carefully chosen wine. The wines are not chosen merely to match, but to illuminate. They are poured to heighten the dish, to shift the mood, to draw out conversation.
Omakase : What makes the evening different is it’s omakase spirit. A seasonal menu, but a promise of discovery—new cuisines unfolding with every course, each plate a quiet conversation between tradition and reinvention.
Cuisine : Step into a world where the oriental meets the occidental. We don’t believe is recipes, we believe in techniques. Expect to find rare unions of techniques, flavors, countries and ingredients- without boundaries but with an expectation to delight your senses.
Special talks: Some evenings will also feature a guided, interactive “Know Your Wine” session: exploring aromas, textures, terroirs, and the art of pairing, in a way that is both elegant and accessible. Not a lecture, but a dialogue—because wine, like people, reveals itself best when questioned gently.
Celebrations : Whether you’re celebrating a birthday, an anniversary, a milestone, our table could be the perfect place to host your guests, at a home outside your home.
Preferences : Upon requests, dishes may be shaped to suit your preferences and also be respectful towards restrictions, because a shared table should feel deeply personal. We do not hold any certifications, but our approach is that of transparency and integrity.
George & Gil is more than dinner. It’s a soirée where strangers arrive, and depart as if they had always known each other.

Quiet Luxury
All our products have been tasted and analyzed several times at our partner estates. We use a carrier specialized in transporting spirits and our wines are stored in a temperature controlled room. The vast majority of our products come from sustainable, organic, biodynamic or high environmental value agriculture.
